Incorporating vegetables as a side dish is a great way to peak interest in healthy diet decision making and spark healthy digestion. Here are a few tips to spice up your veggies:

Broccoli: Toss prepared broccoli with butter, minced garlic and a handful of cashews.

Corn: Mix prepared corn with minced garlic, chives and a touch of butter.

Peas: Stir in chopped cooked bacon and sliced scallions to your peas.

Green Beans: Sprinkle prepared green beans with chopped hazelnuts and grated Parmesan cheese.

Mixed Vegetables: Add dried basil, a drizzle of olive oil and a sprinkle of sea salt to prepared mixed vegetables.

Southern Style Succotash

A new variation on classic succotash--we've added okra and stewed tomatoes.

Ingredients

  2 Tbs margarine or butter

  1 1/2 tsp Worcestershire sauce

  1 tsp lemon juice

  1/4 tsp red pepper

  3 cups Kellogg's Corn FlakesĀ®

  1/2 cup chopped onions

  1/3 cup chopped green bell pepper

  1 clove garlic, chopped

  1 can (28 oz.) stewed tomatoes, drained

  1 can (8oz.) tomato sauce

  2 tablespoons dried parsley flakes

  1/4 teaspoon red pepper

  1 package (1lb.) frozen, cut okra, thawed

  1 package (10 oz.) frozen whole kernel corn, thawed

Directions

1. In 12-inch fry pan, heat margarine, Worcestershire sauce, lemon juice and red pepper over low heat. Add KELLOGG'S CORN FLAKES cereal, stirring gently until cereal becomes lightly browned and crisp. Set aside for topping.

2. Coat 12-inch fry pan with cooking spray. Saute onions, green pepper and garlic. Add remaining ingredients. Cook, stirring occasionally until okra is tender. Sprinkle with topping. Serve hot.
